Asparagus & Edamame Orzo Salad

Ingredients for Orzo Salad

This recipe has been modified from the original version 'Asparagus & Edamame Orzo Salad' by Quick and Easy Recipes. 

Ingredients for 4 servings:
  • 1 Cup of Orzo Pasta
  • Asparagus
  • Green Peas
  • Grilled Peppers
  • Grape Tomatoes
  • Extra Virgin Olive Oil


Boiling orzo

Boil a cup of orzo for 10-15 minutes or till they get tender the way you like.

Boiling peas and asparagus

Boil chopped asparagus and green peas for 5 minutes. Don't boil them too long unless you like mushy vegetables. :)

Putting Boiled Orzo Pasta in a Dish

Mixing with Vegetables

Add cooked asparagus and peas along with fresh tomatoes. 


Drizzle 2-3 TBSPS Olive Oil

Drizzle and drizzle. Any fine quality of EVOO would be fine, but this case I would recommend O Olive Oil Organic Meyer Lemon for its wonderful citrus flavor adding an extra kick to the dish.
