This recipe has been modified from the original version 'Asparagus & Edamame Orzo Salad' by Quick and Easy Recipes.
- 1 Cup of Orzo Pasta
- Green Peas
- Grilled Peppers
- Grape Tomatoes
- Extra Virgin Olive Oil
Boil a cup of orzo for 10-15 minutes or till they get tender the way you like.
Boil chopped asparagus and green peas for 5 minutes. Don't boil them too long unless you like mushy vegetables. :)
Add cooked asparagus and peas along with fresh tomatoes.
Drizzle and drizzle. Any fine quality of EVOO would be fine, but this case I would recommend O Olive Oil Organic Meyer Lemon for its wonderful citrus flavor adding an extra kick to the dish.
