Avocado Pasta Salad

 

Of course it is easy to make and nutritious! I wouldn't introduce it to you otherwise. Toss all the ingredients and mix them with mashed avocado. I would add some lemon juice and EVOO to bring flavor. Great for a light lunch.

This recipe has been modified from the original version by Exploring Healthy Foods.

Ingredients for 2 servings: 

  • 1/2 cup of pasta
  • Cucumber, tomato, and spinach or seasonal vegetables.
  • 1/2 cup of chickpeas
  • 2 avocados
  • 3 tbsp extra virgin olive oil 
  • 2 tbsp lemon juice

Get the pasta cooked and drain the water. 

Have your seasonal vegetables ready along with diced cucumber and tomatoes. 

Rinse chickpeas and drain them. 

Now, it's time to make delicious avocado dressing. Mash avocados. Normally one avocado would work well, but I love avocado and can't get enough. This case, two avocados will make delicious creamy salad dressing for me.

I would add some lemon dressing to bring up citrus flavor. Mix EVOO and lemon juice three to two ratio. (Because of avocado, I would need some more acidity but feel free to add less lemon juice) 

It's almost ready to be served. Toss all the ingredients including mashed avocado and lemon dressing. Mixed them gently till mashed avocados evenly cover the ingredients.
