It is gorgeous spring here in California! Trees are green and the sky is blue. This also means we are getting fresh spring produces and I want to eat them and taking in the spring energy.
Especially if you haven’t eaten enough vegetables (but it was a new year’s resolution to eat more vegetable), it is a good time to pick up fresh spring salad or make it on your own.
We curated five spring salad recipes from fantastic food blogosphere and hope you find them simple enough to try it at home. Also, we made pairing suggestions for the recipes to our favorite local olive oil and balsamic vinegar. Feel free to use your own olive oil you have in your pantry. Just make sure to drizzle enough olive oil over your spring salad.
1. Spring Greens Strawberry and Feta Salad from Roti N Rice
Strawberry and feta cheese already sounds good together. Add some greens then drizzle enough medium peppery olive oil along with berry flavor balsamic vinegar. It sure will bring appetite and nutrition as well. If you don’t have berry flavor balsamic vinegar in your pantry, we recommend Seka Hills Elderberry Balsamic Vinegar or Chaparral Garden’s Blackberry Balsamic Vinegar.
2. SPRING CITRUS KALE SALAD from Fit Foodie Find
Kale can be tough, but adding a combination of sweet orange citrus and delicious olive oil can make it different. Our recommendation is Lucero Extra Virgin Olive Oil Manzanillo for its medium pepperiness or O Meyer Lemon Olive Oil to add more citrus flavor to the salad.
3. Spring Pasta Salad with Asparagus, Morels & Lemon Parsley Dressing from Feasting At Home
This is my kind of salad. Pasta and fresh vegetables drizzled with delicious olive oil and lemon zest. We would recommend McEvoy Ranch Extra Virgin Olive Oil for its extra pepperiness to the pasta salad to bring more flavor to your pasta salad.
4. SPRING ROOT & WATERCRESS SALAD from Love & Lemons
Look at how vibrant colors spring brings to our table. If you never really had beets and other roots, this blog would give you a great tip how to turn roots into a delicious salad. Fine olive oil turns bitterness of veggies into sweetness. 5. Spring Asparagus Salad from Dine & Dash
If you are not much into fruit salad, we got a savory one. Spring asparagus with eggs and potatoes. For olive oil pairing, we recommend O Meyer Lemon Olive Oil to bring additional zest to the dish. Chaparral Gardens Blackberry Balsamic Vinegar would be a great choice to bring delicious tart flavor as well.
